
Everything is pruned and now we are finishing tying down the vines to the fruiting wires. We will be done this week. Around the first or second week of May we should see budbreak, and those beautiful pink petals. We know that spring is coming because the soil is giving off its sweet fragrance. Of course that was a few days ago. We are freezing again!!!
Chris is getting his tractors in good order, oiled and lubed and checking on our fleet of golf carts.
Ros and Perry are putting down some of their homemade compost to build soil organics, and replacing vineyard posts and wires.
The wine has been resting in its barrels over the winter, and we have been topping monthly as the water evaporates and the wine concentrates. Bottling will start in a month or two, and after that comes bottle aging and then the sipping begins!!
Jack the rooster has been staying at the Bay Home with a paralyzed foot and blind eye until the nights get warmer. The photo to the right was taken right after bath time! We have a new batch of CRAZY LOOKING chicks arriving, by mail, on May 21st. Our old girls are still producing eggs, one each, every day. This will bring our egglaying population to 35 this fall.
Scooter, our new duck, has decided to try and make a family with 12 eggs under her belly. Hopefully by the end of April we will be sharing the pond with some new quackers!
Ros is starting to turn soil for her gardens this year and will have some mesclun ready by June along with other vegetables during the year.
In July, on Saturday the 7, 21, and 28, we will be teaming up with Southold Fish Market and having food and wine pairing picnics, at 5 PM until 7 PM. We will take orders, pick up your picnic, and bring it back to you as you relax at the vineyard with some Old Field wine and music. Enjoy your picnic until 8 or so. We think this is going to be a great time for all!

Rooster Tail
This blend of Merlot and Cabernet Franc has hints of blackberry and plum with a nice, smooth finish. This table wine goes great with a burger, steak, or tuna.

100% Chardonnay with a nose of citrus, orange rind, and minerality. The mouth is crisp and clean with pineapple, citrus, and a touch of slate. In French barrels for 4 months.

2003 Cabernet franc
Oaked for 22 months this garnet red wine has a slightly floral nose with nutmeg and licorice overlaying mulberry. A mouth feel of fresh cherries and mulberry with a spicy finish, this wine though still very young is very drinkable. (78% Cabernet franc / 22% Merlot)

2001 Merlot
This reserve wine which has extended barrel aging of 30 months, exhibits the blackberry, black cherry fruit of a premium merlot and a bold spicy flavor due to the 10% Cabernet Franc. Big tannins will allow this wine to age for 5-10 more years.

2003 Blush de Noir
The still half of our sparkling and made from Pinot Noir grapes, this wine tasting of honey, grapefruit and a touch of strawberry makes a refreshing treat for a warm, lazy afternoon.

2001 Blanc de Noir
Filled with bright, white, cherry Pinot Noir fruit, this driest of the sparkling wines will delight your mouth with its tiny bubbles!
Made using the French MŽthode Champenoise Style the secondary fermentation takes place in the bottle where the wine remains until it is sold. This allows for the wine to become more fully integrated with the yeast which produces a more complex wine. Only 20% of the United States' sparkling wine is produced using this method because it takes extra labor, time, and aging space.
