
Wine Club members harvest Chardonnay for Blanc de Blanc. Thanks for the help!
We are in the thick of things! The vines have and will be delivering their much nursed and pampered grape clusters to us after months of tender care and with an awful lot of aid from mother nature herself. We really have had the season of decades. Small but timely amounts of rain and not too much heat has resulted in berries with great skin to juice ratios, so flavours and colours should be awesome.
The Pinot Noir, for our sparkling wine, came in as perfect clusters bringing tears to our eyes! We also picked brilliant Chardonnay clusters to go into our first Blanc de Blanc sparkling wine. All of our champagne lovers keep your taste buds on the alert for the 2007 vintage. It will be something!!!
Next grape up for picking will be the Merlot. We are going to harvest this in several small batches, starting this week. Cab Franc will follow.

Our new chickens are almost fully grown and we are seeing the occasional tiny egg so by the end of this month, we should have a good supply of daily eggs for sale. There will be brown and white ones, big and small and even pastel! Unfortunately, we lost one of our ducks and a gorgeous polish hen to a marauding red tail hawk, very sad.
The deer fence is all around the property and though the gates are not yet in place, the deer are at bay. (Last year we lost 80% of our Merlot to deer.)
In September we bottled the first wines that Perry and I have made on our own. 1800 bottles of Cabernet Franc were bottled, 6 at a time and each hand corked! The same was true of the red Pinot though only 400 bottles of that one. We started at 6:30 AM and finished at 9:30 PM. Once you start you cannot stop.
Our big news is that we purchased our first bit of automation. We have a brand new crusher-destemmer that cuts our task down to minutes instead of hours and lots of sore muscles. And we bought a beautiful hydraulic barrel press, which gently presses the last bits of juice out of the skins without breaking the seeds. Two wine club members happened to stop in for some wine and got dragged into helping us press out the Pinot which also included bucketing wine into the barrel (the pump broke). Thank you Jeanette and Radames!
It has been another busy year at The Old Field. We began in February with the Wine Club Dinners, followed by a cocktail party; dinner party; Saturday evening dinners at the Tasting Room in July; five weddings; several large private tastings; five Wine Camp groups and Thursday night movies on the bay. Whew!
And in addition, just in case we don’t have enough going on, Chris is running for Town Supervisor. Keep your fingers crossed that he wins and if you vote in Southold, we would certainly appreciate your vote. All the best from all of us,

2005 Barrel Fermented Chardonnay New Release
Having aged in French oak for 4.5 months this Chardonnay is displacing carmelized flavors along side tropical fruits (guava) and bosc pear.

100% Chardonnay (20% Barrel Fermented, 80% Steel Fermented), has a floral nose with ripe peach and apple. Clean and fruity this is a very refreshing summer wine.

Made from Pinot Noir grapes, this wine is bright and crisp, with white cherry, lemon and hints of apple cider It goes great with shrimp, fluke, and a turkey sandwich. All stainless steel, the still half our our sparkling wine.

This blend of Merlot and Cabernet Franc has hints of blackberry and plum with a nice, smooth finish. This table wine goes great with a burger, steak, or tuna.

2004 Chardonnay
100% Chardonnay with a nose of citrus, orange rind, and minerality. The mouth is crisp and clean with pineapple, citrus, and a touch of slate. In French barrels for 4 months.

2003 Cabernet franc
Oaked for 22 months this garnet red wine has a slightly floral nose with nutmeg and licorice overlaying mulberry. A mouth feel of fresh cherries and mulberry with a spicy finish, this wine though still very young is very drinkable. (78% Cabernet franc / 22% Merlot)

2001 Merlot
This reserve wine which has extended barrel aging of 30 months, exhibits the blackberry, black cherry fruit of a premium merlot and a bold spicy flavor due to the 10% Cabernet Franc. Big tannins will allow this wine to age for 5-10 more years.

2001 Blanc de Noir Sparkling
Filled with bright, white, cherry Pinot Noir fruit, this driest of the sparkling wines will delight your mouth with its tiny bubbles!
Made using the French Méthode Champenoise Style — the secondary fermentation takes place in the bottle where the wine remains until it is sold. This allows for the wine to become more fully integrated with the yeast which produces a more complex wine. Only 20% of the United States' sparkling wine is produced using this method because it takes extra labor, time, and aging space.
