In the Vineyards

We continue as always to experiment with pruning techniques and trellising and have only an acre left to do. Pruning allows us to space our fruit to receive optimum sun and wind exposure thus increasing grape quality along with determining the quantity of fruit. It is a long job and amounts to approximately 20,000 cuts an acre which translates into achy backs and sore hands! But we do love it.

This year, we are adding Sauvignon Blanc to our fields which we’ve wanted to do for a while. So sit back and wait 4 years for a lovely addition to The Old Field lineup.

On The Farm

All of our feathered characters are doing great! The winter was not too harsh so most of the year they got to feed on grass and run around like two year olds. Wally and Brownie (our resident goose and duck) had a great winter because the pond stayed open so they got to swim a ton along side the new resident muskrat.

In the Winery

Winter time in the winery is fairly peaceful consisting of tasting the wine developing in the barrels and "topping up' them up. A barrel is porous and the watery portion of the wine evaporates at a rate of 12% a year through the cellular structure. Air is the enemy of wine, so as the water leaves, air replaces it increasing the chances of infection, so we are ever mindful to add, "top up", with more wine to keep the barrel filled.

Events

March: Tree Identification- A great activity for those of you that like to take walks! This self guided tour takes you around the Old Field property and points out the amazing trees that have been around for hundreds of years. Might we suggest a Merlot to keep you warm!

April: Sustainable Agriculture walks - owners Perry or Ros will be sharing their thoughts and speaking about their practices of this type of farming which is gaining momentum nationally. Tours starts at 11:00 AM on Saturdays and Sundays.

Wine Club

By now Wine Club members have all received their February shipments and are enjoying their wines. We just had our final winter dinner, we had three this year, and we would like to thank all who came. Perry did a brilliant job along with our team, Scotty, Maureen and Nick and it was all very successful. The next big affair will be in June. Please check the website for all dates to come.

2002 Merlot New Release
This 100% Merlot has spent 24 months in French oak. Mature tannins and a palate of black cherry and cedar are the hallmarks of this vintage. Soft and silky this wine will continue to enrich with age. A great accompaniment to chicken, poached salmon and turkey.

2005 Barrel Fermented Chardonnay New Release
Having aged in French oak for 4.5 months this Chardonnay is displacing carmelized flavors along side tropical fruits (guava) and bosc pear.

2005 Mostly Steel Chardonnay
100% Chardonnay (20% Barrel Fermented, 80% Steel Fermented), has a floral nose with ripe peach and apple. Clean and fruity this is a very refreshing summer wine.

2005 Blush de Noir
Made from Pinot Noir grapes, this wine is bright and crisp, with white cherry, lemon and hints of apple cider It goes great with shrimp, fluke, and a turkey sandwich. All stainless steel, the still half our our sparkling wine.

Rooster Tail
This blend of Merlot and Cabernet Franc has hints of blackberry and plum with a nice, smooth finish. This table wine goes great with a burger, steak, or tuna.

2004 Chardonnay
100% Chardonnay with a nose of citrus, orange rind, and minerality. The mouth is crisp and clean with pineapple, citrus, and a touch of slate. In French barrels for 4 months.

2003 Cabernet franc
Oaked for 22 months this garnet red wine has a slightly floral nose with nutmeg and licorice overlaying mulberry. A mouth feel of fresh cherries and mulberry with a spicy finish, this wine though still very young is very drinkable. (78% Cabernet franc / 22% Merlot)

2001 Merlot
This reserve wine which has extended barrel aging of 30 months, exhibits the blackberry, black cherry fruit of a premium merlot and a bold spicy flavor due to the 10% Cabernet Franc. Big tannins will allow this wine to age for 5-10 more years.

2001 Blanc de Noir Sparkling
Filled with bright, white, cherry Pinot Noir fruit, this driest of the sparkling wines will delight your mouth with its tiny bubbles! Made using the French Méthode Champenoise Style — the secondary fermentation takes place in the bottle where the wine remains until it is sold. This allows for the wine to become more fully integrated with the yeast which produces a more complex wine. Only 20% of the United States' sparkling wine is produced using this method because it takes extra labor, time, and aging space.
